Rethink configuration property structure

Description

We're using hierarchical properties separated by a dot, but we've outgrown this approach. We should discuss using a better structure, maybe YAML.

Closing as duplicate of HSEARCH-859. We'll rethink the property keys there. We won't be moving to YAML, because configuration properties are extracted from ORM's or Infinispan's configuration, and we don't want to force those to use YAML (especially ORM, which has to support JPA).
